The scotch egg needs no introduction ? their English origins (they were created by Fortnum & Mason of Piccadilly in 1738), metropolitan modishness and comedy potential having already been thoroughly chewed over, digested, and the crumbs left out for the wasps on these pages. It's got to the point where one can judge a pub's level of culinary ambition by its attitude to scotch eggs.

With the jubilee in sight, they've been co-opted as a celebratory snack ? presumably because us food writers played our coronation chicken card too early, and thus need something else to provide a patriotic counterpart to the usual modern British picnic fare of foccacia and Ottolenghi salads. The scotch egg, being robust, conveniently hand-sized, and utterly, ridiculously delicious, fits the bill nicely.

How times change. I still remember my surprise on encountering my first ever "proper" scotch egg at the age of 21 ? having been put off the things by the rubbery tennis balls that passed as summer fare at school (with or without the greying reformed egg, depending on your relationship with the dinner lady in question), its shape perplexed me. The discovery of a real life egg inside seemed to elevate the thing to a piece of culinary cleverness of Heston-like proportions. (Thank goodness there's little chance of a child growing up in such criminal ignorance these days ? if you don't fancy taking yours to the pub with you, it's your parental duty to make them a batch at home instead.)

Meat: sausagemeat and mince

The most important part of any scotch egg is, of course, the meat ? even Ginsters can, presumably, boil an egg. Although I was deluged with weird and wonderful recipes for venison, smoked haddock and even vegetarian versions from Twitter egg-fanciers, in the interests of sanity I'm sticking with the classic pork variety.

The vast majority of recipes call for sausagemeat, but I find a few exceptions: Tom Norrington Davies uses semi-lean mince in Just Like Mother Used to Make, while the Ginger Pig Meat Book goes for a combination of mince and pork fat. (Pork fat is not, of course, readily available in supermarkets except in the form of lard, but my local butcher was willing to slice a snowy hunk from a piece of belly for me. For the sausagemeat, I used 97% meat stuff, as plainly flavoured as possible, to accommodate the herbs and spices used by the various chefs.)

Although they're easy to work with, I find the all-sausagemeat eggs from Angela Hartnett, Gary Rhodes and Heston Blumenthal greasy in comparison with Tom Norrington-Davies' slightly dry mincemeat version. Neither adjective is ideal, frankly ? if you're deep frying pork, you can afford a certain amount of leanness, but the shell shouldn't crumble in the mouth.

The Ginger Pig version falls happily in the middle, the mince providing a pleasant meatiness, and the added fat keeping everything juicy while stopping short of being oily. However, mindful of the difficulties those without an obliging local butcher will face in obtaining the fat, I experiment with a mix of sausagemeat and mince, and find I actually like it more ? the two seem to combine more easily, and are easier to shape.

Heston runs his sausagemeat through a food processor, which gives it an unnervingly smooth texture and turns it into something horribly reminiscent of the "pink slime" so derided by Jamie Oliver on his recent visit to the US. I like my meat to put up more of a fight. (The food processor also contravenes my official policy on unnecessary washing up.)

Although cutting into a soft-boiled yolk is one of life's simplest pleasures, I prefer my scotch eggs a little more robust ? particularly if they're destined for the picnic basket, rather than to be enjoyed fresh from the fryer (if that's not a contradiction in terms). Angela Hartnett and Gary Rhodes' eggs, put into boiling water for seven minutes, are both a little liquid for my taste, and Heston's is even worse. (Given his pan of eggs is whipped from the heat as soon as it comes to the boil, and left to stand for a measly three minutes before draining, I'm just relieved they don't dissolve in my hands as I'm peeling.)

Times for eggs put into cold water and brought to the boil, which I find helps to prevent cracking, vary from four minutes (Tom Norrington Davies) to six from the Ginger Pig. I'm going for five, to keep the yolk velvety soft, yet solid enough not to drip on the rug. Once they're drained, putting them into iced water, ? la Heston, rather than simply running them under the tap like Tom, seems the most effective way to arrest the cooking process.

I find rolling the eggs in a little flour before wrapping them, as Angela Hartnett suggests, helps the sausage mixture to cling better ? and, although the tactile approach of the Ginger Pig is more fun (roll your sausagemeat into a ball, poke a hole with your thumb, then stick the egg inside) rolling it out between two sheets of clingfilm, in obedience to Gary Rhodes, does give a more even thickness.

Diluting the egg coating with a splash of milk is a helpful tip from Heston to give it a more even consistency ? fewer stringy bits of white dangling off into the breadcrumbs ? although chilling the sausagemeat balls before crumbing doesn't seem necessary, as none of the eggs so much as threatens to fall apart. (Actually, there's always one ? but no amount of chilling could have helped Lorraine Pascale's egg, of which more later.)

A well-made scotch egg should be a crisp, golden orb of beauty ? which is why the crumb is so important. The much-lauded Handmade Scotch Egg company reckons they've got to be fresh bread rather than dried but I'm a sucker for Japanese panko breadcrumbs, as recommended by the Ginger Pig ? not traditional, perhaps, but they give a far crisper crumb, which can't be argued with in my opinion. And who could quibble with Gary Rhodes' double dip ? an extra thick layer of crunch for your buck, and economically topical to boot.

The Ship, the Wandsworth pub which takes its scotch eggs seriously enough to organise an annual competition, fries finely diced carrot, onion, celery and leek to add to the meat, rather as if they were making a stew rather than a scotch egg. I can't really taste them in the finished product to be honest, and the same goes for Gary's shallot.

Angela Hartnett suggests adding garlic and thyme, giving the eggs an oddly Mediterranean air ? which seems almost classic next to Heston's smoked paprika and American mustard hot dog of an egg. Tom Norrington Davies' lemon zest doesn't float my boat either ? I'm going to stick to traditional pairings like sage, mace and mustard ? but I do like the fresh herbs he includes, which give the sausagemeat a spuriously bright and wholesome look.

Lorraine Pascale flavours the flour and the crumb rather than the meat, which seems rather pointless, given the relative quantities involved: I certainly can't detect her mustard powder and thyme in the finished article.

There's little quibbling here ? everyone deep fries their eggs, except the lovely Lorraine Pascale, who prefers to bake them. I'm quite excited by this, until I peep into the oven and discover that not only are they not "golden brown" after 25 minutes, but the still-pallid meat has begun to slide from the egg, leaving it horribly overcooked. Some things are simply designed to be an occasional, artery-scorning treat. (Lorraine does admit that she often buys scotch eggs at petrol stations, so perhaps our expectations differ.)

Both the Ship and Heston pop their eggs into the oven after frying, but as long as you control the heat of your fryer, this shouldn't be necessary ? you can cook the meat right through without harming the egg.

Whatever you're celebrating this weekend, a scotch egg will do you proud (vegetarians, if any of you are still reading, check out this recipe). Pulchritudinous, portable, and eminently patriotic, it's the best thing never to come out of Scotland.

Makes 4

6 eggs
200g plain sausagemeat
200g pork mince
3 tbsp chopped mixed herbs (I like chives, sage, parsley and thyme)
A pinch of ground mace
1 tbsp English mustard
Splash of milk
50g flour
100g panko breadcrumbs
Vegetable oil, to cook

1. Put four of the eggs into a pan, cover with cold water and bring to the boil. Turn down the heat and simmer for five minutes, then put straight into a large bowl of iced water for at least 10 minutes.

2. Put the meat, herbs, mace and mustard into a bowl, season and mix well with your hands. Divide into four.

3. Carefully peel the eggs. Beat the two raw eggs together in a bowl with a splash of milk. Put the flour in a second bowl and season, then tip the breadcrumbs into a third bowl. Arrange in an assembly line.

4. Put a square of clingfilm on the worksurface, and flour lightly. Put one of the meatballs in the centre, and flour lightly, then put another square of cling film on top. Roll out the meat until large enough to encase an egg and remove the top sheet of clingfilm.

5. To assemble the egg, roll one peeled egg in flour, then put in the centre of the meat. Bring up the sides of the film to encase it, and smooth it into an egg shape with your hands. Dip each egg in flour, then egg, then breadcrumbs, then egg and then breadcrumbs.

6. Fill a large pan a third full of vegetable oil, and heat to 170C (or when a crumb of bread sizzles and turns golden, but does not burn, when dropped in it). Cook the eggs a couple at a time, for seven minutes, until crisp and golden, then drain on kitchen paper before serving.

SAN FRANCISCO DE MACORIS, Dominican Republic (AP) ? An elusive songbird that wings its way each year from austere mountaintops of the northeastern U.S. to the steamy forests of the Caribbean has inspired the creation of what conservationists hope will be a new model for nature reserves in a country that has long struggled with deforestation.

The reserve is taking shape in a lushly overgrown former cattle ranch measuring about 1,000 acres, at the edge of a deep green forest in the Dominican Republic's rugged northeast. Conservation-minded Dominican and U.S. investors have acquired the plot as a pilot project, hoping to protect what they say is a global biodiversity hotspot that's home to dozens of threatened species.

Tentatively known as the Reserva Privada Zorzal, the government sees the reserve as a potential example, showing that such land can be put to better uses than burning down the trees to convert it to pasture, a typical approach in this Caribbean country with only about 40 percent of its forest cover left. Neighboring Haiti, which shares the island of Hispaniola, has virtually none of its forest standing.

Jesus Moreno, a Dominican businessman whose family is partially funding the reserve, says the portion of the property where most of the trees have already been removed is well-suited to low-intensity, organic agriculture. He plans to grow macadamia trees and cacao, the raw material in chocolate, while allowing the forest to regenerate, in perpetuity, on three-fourths of the holding. The country's environment minister is scheduled to inaugurate the reserve project on June 5.

"I am not trying to make this into a big business and make a lot of money," said Moreno, whose family's ventures also include a nursery that grows macadamia trees and the country's only factory processing the nuts. "We are trying to create a model and break the cycle of destruction."

The concept of setting aside private land for conservation in land trusts or easements is an old one, long in use in the U.S. and elsewhere, but still rare in the Dominican Republic, a largely poor country.

Some private landowners have set aside tracts for ecotourism and nature reserves, and the government has designated more than 130 public reserves. But much of the country's forests face threats from development, agriculture and illegal timber harvesting, carving what remains into ever smaller chunks that leave species isolated and vulnerable.

In practice, the government reserves usually provide protection to endangered species in name only, said Sesar Rodriguez, the executive director of the Dominican Environmental Consortium.

Among those species at risk is the zorzal migratorio, known in English as the Bicknell's thrush. The palm-size, brownish songbird mostly comes out at dusk or dawn and, like many birds, heads south in the winter. It divides its time between the Caribbean islands and mountaintop forests in the northeastern U.S. and southern Canada that generally rise above 3,000 feet.

The bird is considered vulnerable, with an estimated fewer than 100,000 in the wild, because it occupies a narrow range of habitat that's under pressure on both sides of its migratory route, said Chris Rimmer, an ornithologist at the Vermont Center for Ecostudies who is an expert on the Bicknell's thrush and helped establish the reserve. Threats to the species in the U.S. include air pollution and loss of the conifer forest habitat from development and climate change.

It's not a high-profile species likely to spur public passions, and some bird species in the Dominican Republic are under a more dire threat, Rimmer readily acknowledges. But he and others are nonetheless devoted to the Bicknell's thrush, what he calls an "enigmatic" bird.

"It's much bigger than just this one little migratory songbird," Rimmer said. "If we protect it we automatically protect all the other elements of the flora and fauna, many of which are themselves under siege."

The Cordillera Septentrional range, a mist-shrouded cloud forest that shimmers an emerald green in the distance from the former pasture acquired for the reserve, is also considered habitat for vulnerable species such as the Hispaniolan parrot and mammals such as the Hispaniolan solenodon, a nocturnal burrower that resembles a possum with a long snout.

Rimmer, for one, has spent countless hours studying the Bicknell's thrush in the granite mountains of New England and the dense forests of the Dominican Republic, listening for its nasal, swirling call. "It's kind of ethereal, I guess, kind of mysterious," he said of the sound.

He and other researchers noticed that as the Dominican Republic was losing forest, female Bicknell's were being crowded out of their prime habitat by the larger males, depriving them of food they need for the journey back to North America.

He began working with the Dominican Environmental Consortium and others to find a way to expand two areas designated as protected by the government ? the Loma Quita Espuela, which Moreno's father helped found, and the Guaconejo reserves.

This loose-knit group eventually found land owned by the family of an elderly doctor that was just a few miles west of the Loma Quita Espuela reserve, prime habitat for the thrush and near the country's cacao-growing center of San Pedro Macoris, a combination of factors that seemed perfect for a blend of profit and preservation, said Charles Kerchner, an American working as a project manager for the consortium. Part of the land was still an active cattle ranch, the rest already in various stages of regrowth and some had been left untouched for so long that it had become fairly healthy secondary growth forest - not virgin, by any means, but not bad.

Most of the money for Reserva Privada Zorzal came from the Eddy Foundation of Willsboro, New York, and Moreno's family, which previously owned a controlling stake in the Helados Bon chain of ice cream stores in the Dominican Republic and neighboring Haiti, Kerchner said.

Danneris Santana, a vice minister in the natural resources ministry, said about a dozen new private reserves are in process of getting approval under regulations that were updated last year. Moreno and others involved in the zorzal project say several landowners in the vicinity of their site are close to adopting similar plans.

"While it's great that we are doing (the Zorzal reserve), it's an isolated project and we need others to protect their land as well," Kerchner said.

Much will depend on the economic viability of the effort. Besides the macadamia and cacao, Kerchner said they are looking for other sustainable uses of the surrounding forest, such as honey production and high-end chocolate.

The Dominican Republic is already a producer of organic cacao in the fertile hills around San Francisco de Macoris and has a growing macadamia nut crop, but the country is not a significant global supplier of either commodity. Most of the world's cacao comes from Africa and Indonesia; Hawaii and Australia are the main producers of macadamia nuts.

The backers of the project expect to allow public access but the plans are not yet defined. The property is more than an hour's drive along a bone-jarring road from the nearest town.

"To be a sustainable business, we need to get value from this forest," Kerchner said.

You don?t want to overdo it, but if you originally wrote the article about ?editing photographs? and you decide to title the article ?editing images?, you?ll want to change the word photograph to image in the majority of instances.

Now that you have a highly trafficked key-phrase as the first words in your title, you?ve mentioned it quickly in your first sentence / paragraph and you?ve made sure that the article agrees with your choices, you?ll also want to change the URL of your article so it ONLY includes your key-phrase. For example the title of this article is ?Effective SEO Made Easy?, and the hyperlink is entered as effective-seo-made-easy (Note: I did not optimize this post for search).

The Results

A good example of how to use relevance in an on-site SEO strategy to optimize your site for search is an article written by Candace Mountain that?we published earlier this year, ?What is Pinterest?? By editing the articles as you publish all the changes are made at the same time you?re revising each article for grammar and spelling. There is no extra work needed for SEO and the articles you?re publishing anyway for your content marketing strategy become your SEO strategy as well. The article Candace submitted was originally called ?A Beginner?s Guide to Pinterest?, but since my cursory search showed that an alternate title could do very well on Google I changed the title and spent a few minutes going over the content.

Social Media Sun's Pinterest article ranks right below the Pinterest website itself and content that is denoted as fresh by Google (the article with a date). After the dated article has been listed for a few weeks it will fall behind the Social Media Sun article. Notice how the keywords are bold in the excerpt, which stresses the importance of mentioning your keywords early in your post.

You should never entirely re-write an article or alter the meaning of an article just to satisfy a popular key-phrase. Since there are lots of people searching for the term, there is going to be a piece of content that fits the search perfectly. If a specific piece of content misses the underlying topic then add the popular key-phrase to a list and keep it in mind for an article topic or a future title.

• Always fill in the description and ALT tags for images you include in your content. An effective way to add another route to your article is by naming the picture after your article, and filling in the descriptive tags accordingly.
• Use the categories and tags to your advantage. Include all of your keywords as tags and if possible as a category.
• When you first install your blog set up the post URLs so they are taken from the title of your posts, and don?t include things like dates and extra taxonomy.
• It is best to make sure your domain name is relevant to much of your content. An article about Social Media Marketing will do better on Social Media Sun than it would on AdamJustice.me because of the relevance in the domain.
• Set up your blog to pull meta data such as tags, a description and page title from the data entered in your title, tags and category fields.
• Always make your key-phrase the very first words in your title, and the only words in your URL.
• Always re-enforce your topic by including the key-phrase immediately in the beginning of your article.
• Do all of these things during the editing and publishing process to limit the time you spend on optimization.

With this strategy Social Media Sun has went from driving most traffic through social media shares to getting most traffic passively from organic search. Our traffic from Google increased by 624 percent from the month of March 2012 to?May 2012. Since search traffic?will likely grow?at a consistent rate as long as we publish on the same schedule, Social Media Sun could be getting?over 20,000 visits come from Google by our first anniversary in?February 2013.?

I realized that I was a lesbian when I was 14 years old.? It was terrifying, liberating and a myriad of other things.? So what was the first thing I did?? I took to the internet of course!? I wanted to know what being a lesbian entailed.? What music seemed to have a great lesbian fanbase (Tegan and Sara, Ani DiFranco, Sleater-Kinney), what movies would give me an idea of how scary or sexy it can be to be a lesbian (Lost and Delirious, Bound, But I?m a Cheerleader), and what kind of lifestyle roles were associated with my new found sexuality.? It was overwhelming and exciting.? At this point I had never kissed anyone and while the idea of having sex with a woman was alluring, I was clueless about what it would feel like.? But I never once asked myself what numerous friends, acquaintances and even strangers at bars have for the past ten years:

The teenage game of ?Never Have I Ever? became difficult.? ?Never have I ever had sex with a woman? or ?Never have I ever had gay sex? or ?lesbian sex? became this nebulous question.? Luckily, it didn?t take me long to to decide that I needed to decide what my own personal parameters were.? I decided that lesbians were ?a base short?, for lack of a better term, in the eyes of society. In our heteronormative society, penetration defines intercourse.? The porn industry targets heterosexual males by presenting ?lesbian? scenes where there is generally a penetrative toy involved or the women do not climax until a man enters the scene.? This reaffirms the very upsetting idea that sex can only be considered tried and true sex if a phallus is involved and, as a result, that lesbianism is not real.? I realized that I was going to have to defend my sexual relationships because the majority of people I encountered, did not consider them to be valid.

There were numerous occasions during college where I would be at a bar with my partner and we would often strike up conversations with men.? I am generally very careful in these situations.? I love socializing and meeting strangers who will tell you their life stories before telling you their own name.? However, if I were a betting woman, I could have made a killing off of how many times I anticipated that once our relationship was revealed, how the conversation would proceed.? There is a blatant amount of disrespect toward committed lesbian relationships.? Men have invited themselves into sexual encounters with us, sometimes in order to prove that we just need the right man.? I have even been told that all I needed was ?a good deep dicking.?? The conversations turn more intimate than I feel they would with their own heterosexual friends.

Also, while gay men face this issue as well in their dialogues with heterosexuals, I feel that their sex is more understood due to the presence of male organs.? In fact, I?ve had the same ?lesbian sex? conversation with gay men.? My gay roommate often jokes with me that he doesn?t have to worry about me because I ?can?t have sex really anyway, right??? We?ve established a healthy relationship and I know that his comments are in jest, but I?ve felt lesbian shame in Boystown, here in Chicago from absolute strangers.? Comments have included ?Oh leave the dykes alone, their just going to go home and scissor? followed by laughter.? Again, my most intimate and physical connection with someone, is reduced to a joke.? It feels like being given a pat on the head and told ?Bless your heart.?

I have never asked any of my friends ?Have you had straight sex yet??, ?Vanilla sex?? or ?Anal gay sex??? I ask if they have had sex.? Then depending on how close I am to them, I may ask about the health of their sexual relationship, but never will I ask ?How deep??,? ?How often do you switch positions?? or ?How does it feel to have abnormal sex that I don?t understand??.? Nor do I suggest that they simply haven?t been fucked good enough if they?ve never been with someone of the same gender.? These questions are invasive and degrade their intimacy with their partner.? When you ask me ?who?s the guy in the relationship??? I know that you?re asking me who wears the strap on that we presumably have to use so that you can justify why my sexuality is acceptable.? And quite frankly, you?ve just violated me with your imagination and taken my privacy.

My sexuality does not prevent me from having sex.? Being a lesbian does not limit me from having unique sexual experiences.? I can still explore kinks and sex subcultures that are not gender or orientation specific.? I find that what limits my sexual interaction, is this idea that sex is simply sex and must be defined as a specific act or a particular finite moment.? I would like to challenge anyone who asks ?What is lesbian sex?? to ask themselves what sex means to them in regards to their own relationships and previous partners.? I could tell you my favorite position or thing to do during sex but I can?t speak for everyone.? All I can tell you is that lesbians are simply having sex.? And from personal experience, it?s pretty awesome.

Scottish Church Group: SSM a "Social Experiment in Which the Guinea Pigs are Children"

The UK Press Association:

Legalising same-sex marriage would "legitimise and encourage" the existence of fatherless or motherless children, according to a report.

A Free Church of Scotland study panel examined the issues surrounding marriage, divorce and remarriage.

The study comes as responses to the Scottish Government's consultation on gay marriage are evaluated.

Referring to same-sex couples, the Free Church report said: "By getting the right to marry, they get more respectability for bringing up children (they already have the right to foster and adopt).

"This is a huge social experiment in which the guinea pigs are children. That is not fair or just to children and does not safeguard their rights. It is really being pushed in a doctrinaire way by the gay lobby without any consideration of the harm that it will do."

The church said that civil partnerships already give same-sex couples the same legal rights as marriage, and therefore there is no need to introduce same-sex marriage.

Union women's hockey team opens season Sept. 29 vs. UConn

The Union women's hockey team will open the 2012-13 season Sept. 29 when it hosts Connecticut at Messa Rink, it was announced Friday.

The Dutchwomen's 34-game schedule includes three games against Capital Region-rival RPI. The teams will play a non-league game Oct. 20 at RPI. The two ECAC Hockey contests wil be Jan. 25 at Messa, and Jan. 26 at Houston Field House.

Union will open ECACH play Oct. 26 at Clarkson. Its first home league game is Nov. 9 against Quinnipiac.

New Division I program Penn State will visit Union for games Jan. 11-12.
